In February 2016, I jumped on the bandwagon of subscription meal services in a desperate attempt to eat healthier and shed some unwanted pounds. My intake of fresh vegetables was null and with suffering from chronic fatigue, endometriosis and IBS I felt horrible all the time. I could barely work a full time job and housework was piling on top of housework.

Enter Blue Apron were I began the process of changing my life. Cooking was never my “thing” because I didn’t really know how and my attempts were bland since I knew nothing about how to cook with spices. Now, cooking has become fun. Like a hobby. I’m still not great at it when preparing a meal outside of my subscription recipes but I definitely know more now.

Since joining Blue Apron, I’ve also tried Green Chef mostly because they offer Paleo diet recipes that decreases inflammation in the body however they were just too expensive. Now I alternate Blue Apron, Martha and Marley Spoon, and Hello Fresh. Hello Fresh is my most recent food subscription service and the recipe below is from my first box.

In my first box, I received 3 recipes for two people. The serving sizes are generous which has been unusual and I was very pleased with the freshness and quality of the ingredients.

The recipe from tonight’s dinner featured Portobella Mushrooms in this Portobello and Orecchiette Primavera with Asparagus, Bell Pepper, and Chives dish. And, for as much of a picky eater he is, my husband loved this dish. My son, not so much. He’s a teenager and mushrooms aren’t on his list of favorite foods.

The ingredients featuring Orecchiette pasta, onion, shredded parmasean cheese, red pepper flakes, sour cream, garlic, chives, red bell pepper, asparagus, and of course, Portabella mushrooms.

Hello Fresh says cooking time is 35 minutes but it takes me much longer than that to get through the washing and chopping of the vegetables because I’m sooo slow. Anyway, an hour later after cutting, chopping, mincing, blanching, straining and stirring, my final result was this:

Love my salt and pepper shaker holder from bear country Pennsylvania? This dish was very tasty even with a few alteration I made to the recipe by not adding all the garlic and only a small pinch of the crushed red pepper.
