Grilled Eggplant & Yogurt with Sundried Tomatoes, Walnuts and Mint


  • 1 Medium Eggplant
  • 1 1/2 oz Walnuts
  • 1 1/2 oz Sundried Tomatoes
  • Olive Oil
  • Salt and Pepper to taste

Yogurt Sauce

  • 1 Garlic Clove
  • 1 Lemon
  • 7 oz Greek Yogurt

Serve with

  • 2 Pitas


  • Mint Leaves

1). Slice Eggplant in 1/2 inch thick slices and arrange in a single layer on baking sheet. Brush with olive oil and Season with Salt on both sides. Set aside. 

2). Peel garlic and finely grate into a medium bowl.  Zest half of lemon into same bowl and add Greek Yogurt.  Halve the lemon and squeeze zested half into bowl then season with salt and pepper. Stir to combine.  Set aside. 

3).  Chop Sundried tomatoes and Walnuts into 1/2 inch pieces. Add Walnuts and tomatoes to a small saucepan with 1/4 cup of oil. Cook over medium heat, approximately 3 minutes and stir occasionally until Walnuts are toasted and tomatoes are plump. Remove from heat. Set aside.

4). Place Eggplant in oven on highest rack with broiler on high (or low depending on your oven). Grill until lightly charred and tender. Approximately 5 minutes per side. 

5).  Broil pitas until warmed through about 2 minutes

6).  Spread half of Yogurt sauce on your plate. Top with Eggplant and tomato & walnut mixture. Garnish with Mint leaves and lemon wedges. Tear warm pitas apart into 4 pieces and serve on the side.  Repeat for second serving and enjoy with a glass of water with fresh squeezed lemon and/or a glass of your favorite red wine. 

Makes 2 servings.

Once Upon a Bookcase October 2016

October 2016 Once Upon a Bookcase Halloween themed Cellphone case and gifts for $26.00/month.  The theme for October, I believe, is Wicked Son of a Witch with Elphaba Wicked’s necklace, scarf and a pen to write spells.

I’m always excited to look inside these boxes that are delivered to me monthly. However I did pause my subscription until February 2017 since I’m not quite sure if I’ll be upgrading my phone in the next couple of months.

This box has definitely put me in the mood for Halloween this year. A green scarf, and look at that necklace! 😍 they match together perfectly, I must say. Above the necklace is the cell phone case, and a pen that looks like a broom. How much more halloweeny can you get 🙂 ?

Autumn in New York

Mid October 2016 in the beautiful mountains of New York.  

My husband and I visited some friends for a weekend of being completely unplugged. No cell phone service and choppy wifi was fine by me as the conversations were plentiful as well as our senses occupied by the rich color of the trees, the scent wood burning in campfire, and the taste of roasted marshmallows. The best part, I also came home with a few new friends and memories that will last a lifetime. 

I call this a secret spot at an undisclosed location because it’s just one of those places you would want to retreat to clear the mind.

This bridge, no longer able to be used by vehicles, is another perfect place to take in the scenery or watch for fish in the water below. 

With one more day until the end of fishing season, the fish knew better as there was barely a bite.

I can surely say this was one pup that enjoyed this trip just as much as her humans. 

I can only imagine how old this tree must be and definitely photo worthy to my eye.

Gorgeousness. I tried to video capture a moment of the wind sweeping the leaves off the trees.

Caramelized Onion and Kale Quiche with Arugula & Pear Salad

Quiche Ingredients

  • 2 small Pie Crust
  • 2 Eggs
  • 1/2 bunch of Kale
  • 1 Garlic Clove
  • 1 Yellow Onion
  • 1 Bunch of Chives
  • 2 Tablespoons Crumbled Goat Cheese
  • Salt and Pepper to taste

Salad Ingredients

  • 1 Bunch of Arugula
  • 1 Pear

Vinaigrette Ingredients

  • 1 Tablespoon of Sherry Vinegar
  • 1 Tablespoon of Olive Oil
  • Salt & Pepper to taste

The Quiche

Preheat Oven to 425 F. Thinly slice the onion.  Mince the Garlic Clove. Remove stems from Kale then roughly chop. Thinly slice the chives.

Crack and beat eggs into a large bowel then set aside.

Caramelize the Onion

Heat a drizzle of Olive Oil in a large pan then add the onions. Season with Salt and Pepper. Cook stirring occasionally approximately 8 minutes. Add a tablespoon of water. Cook stirring frequently approximately 3 minutes. Add another tablespoon of water.  Cook scraping up any brown bits until the onion looks soft and caramelized. Transfer to a bowel and set aside.

Cook the Kale

While the onion caramelizes, in a medium pan heat a drizzle of Olive Oil until hot. Add the garlic and cook stirring frequently until fragrant. Add the Kale and cook for 1-2 minutes until slightly softened. Add 1/2 cup of water and cook stirring occasionally until the Kale has wilted and the water has cooked off. Remove from heat and season with salt and pepper to taste.

Assemble the Quiche

To the bowel of eggs, add caramelized onion, cooked Kale and 2 tablespoons of water.  Season with salt and pepper, if you like. Stir until thoroughly combined the divide between pie crust. Top with crumbled goat cheese and bake on a sheet pan for 18-20 minutes. Let stand for a few minutes after removing from oven then garnish with the chives.

Make the Vinaigrette 

As the Quiche is baking, add the Sherry Vinegar to a small bowel and slowly whisk in 1 tablespoon of olive oil until combined and add salt and pepper to taste.

Make your Salad  

Core and slice pear into matchstick sized slices and add to a salad bowel with the Arugula. Add the vinaigrette to the salad then toss to combine.

Enjoy with a glass of water with fresh squeezed lemon juice or your favorite white wine.

Servings: 2

*Please season with salt and pepper at your discretion.

FabFitFun Fall Edition Review

This box is my absolute favorite. In fact, after using up some points on other subscriptions, I plan to just keep this for a nice touch of fashion and beauty on a quarterly basis. This fabulous box cost $49.00 every three months with an option to buy a full year at $179.00. If you buy for the year, you automatically get put on VIP status and you get the benefit of choosing a few of your items – totally optional for those of you who love to be surprised.

Let’s look at what’s inside this box then come back to the interest design on the outside.

And there’s a lot more underneath those items you see in the picture above.  I’ll talk about all the goodies individually. 

  • The Scarf.  MODCLOTH LOCH AND KEY SCARF— $34.99

This thing is huge, but it is a blanket scarf measuring 55″x 55″. This was one of the items I was able to choose the pattern I wanted with my VIP status on a yearly subscription. Retail value for this blanket scarf is $34.99. A neat tip for this scarf as per FabFitFun’s pamphlet is to “wear the scarf on a plane and use it if you get cold” I love that idea and even though I won’t be on a plane I will use this when traveling. 

I found a very similar blanket scarf on Amazon on sale from $18.99 to $9.99 plus free shipping. The dimensions for the scarf I found is 56″x56″.


This item was a choice between two inspirational quotes. I chose the “good morning gorgeous” quote and the other choice was “joy comes in the morning”.  According to the pamphlet, The Created Co donates 10% of profits to charity so sip away! 


These are cute and I can see wearing them with flip flops this fall. You now what “they” say, “if you aren’t wearing flip flops, you’re overdressed” lol. A great tip I read from product pamphlet is to wear these while getting a pedicure “to keep your feet warm and avoid smudging” Thanks FabFitFun! 

  • THE BROWGAL Clear, Water-resistant Eyebrow Gel—$20.00

This product claims to seal your pencils and powders for staying power on your brows and I agree. I kept in on for over 8 hours before washing my face and I know this brow gel wasn’t ready to quit if I would have given it more time. Pamphlet tip: “Sweep from the end of your brow toward your nose to coat every follicle and add volume. Then brush from the inside to the outside to tame.”


I’ve loved adult coloring books since my oldest son bought me one for the holidays last year. Isn’t that funny? My son buying me a coloring book! Coloring is so relaxing and if you haven’t tried it yet, I highly recommend. The illustrations inside this book alone are beautiful and as an added bonus, the Fall box itself is also all ready for your creative touches (see first photo above).


This oil smells amazing and I know my fair share of stinky lavender oils. I use this as a moisturizer for my legs and arms and it’s not greasy or overly scented. Both a big plus for me. Pamphlet recommends to add a small amount into your bath to “enjoy the aromatherapy benefits.” 

This list goes on which I love about receiving these boxes.


This exfoliant and cleansing buffer smells lovely. It’s hypoallergenic and the “lather is made with extracts of Yuzu, Eldelweiss, and Vetiver.”

  • PURE COSMETICS Nude Collection Eyeshadow Palette—$50.00

I’ve read some displeasure about receiving this product because it’s too close to the Naked palette by Urban Decay. I on the other hand was thrilled to receive this because I didn’t have a palette even close to the colors this one has to offer. Plus, I barely wear makeup as it is so when I do, I like it to look as natural as possible. 


I love this night serum and it doesn’t feel drying like I’ve experienced with serums in the past. Containing “antioxidants, vitamins, natural extracts, and amino acids” the product is appropriately named. 

And lastly, this box contained two sponsored items that are extras and are not calculated into the value of the box. Perfect for my nursing bag that helps with some of my extended work shifts.

And That’s it! What a deal for the price of this box and I can’t wait for the winter box. Do you receive FabFitFun subscription boxes? I think the value for your money is fabulous and the items are much more useful to me compared to other lifestyle boxes.

POPSUGAR. Fall 2016 Limited Edition Review

It was a glorious day in Mid September of 2016 and upon my doorstep were two subscription boxes. Yes, you read that right. Two subscription boxes came to me on the same exact day. So glad my husband wasn’t home.  Nonetheless those two boxes were POPSUGAR and FabFitFun. It was like Christmas morning at the young age of 10, seeing me scoop those boxes up and digging in to them. Now I get the opportunity to breakdown the contents for you item by item so you can decide if these subscriptions are right for you.  Also, for the sake of the length of this post, I will divided the comparisons into two blogs and will link the FabFitFun review below. Stay Tuned!

On to the box. 

First POPSUGAR. The cost is $100.00 for the limited edition and some of the items inside are intended for gifts which helps take a lot of guess work out of my holiday shopping. 

  • #1.  BUJI BAJA – WITH LOVE FROM EUROSTAR Lavender Rib Scarf

I love this scarf and think the color will pair well with just about any fall outfit or jacket. The photo below doesn’t do the color of this scarf justice.  It feels super soft and cozy without skipping a beat on style. POPSUGAR Item description card states suggested retail is $70.00 through bujibaja website.  

I’m not sure why but when typing the Buji Baja URL in to my browser, it switches to the Hat Attach website. Here’s a Hat Attack Buji Baja scarf in black for $48.00 on Amazon. Shipping is free and keep an eye out on other colors. Here’s an even cheaper Rib Scarf from Hat Attack for $21.00 but in charcoal.  Both are made from the same material.  Also, use this $5.00 coupon link for signing in to the Amazon app for the first time to get $5.00 off. The coupon is good for a purchase on anything more than $10.00.

Although I conveniently can’t find the lavender colored scarf for any cheaper, I’m gonna calculate the value of this scarf for $21.00 because that’s how I operate. 

  • #2. JACK & LUCY Faux Fur Pom Keychain

Now here is something I’ve wanted for a while but way down on the priority list so I was happy to receive this item in my POPSUGAR Limited Edition Box. I’m keeping this for myself to use on my nursing tote bag because the color is one of my favorites. Suggested Retail is $41.00 and I would never pay that for a POM. 

Let’s see if I can find this cheaper… Well, I’m finding them on eBay being sold for $21.00 and Poshmark for slightly less. I also found a close duplicate (color and size) on Amazon for $6.29 plus free shipping. So to me, I would opt for the Amazon find and say this baby is valued at $6.29. 

  • #3. SLOANE STATIONARY Great Thoughts Notepad

I don’t know about you but I don’t care to receive stationary items in subscription boxes. With my POPSUGAR experience so far this year, I’ve received blank cards with envelopes, ombre’ colored sticky notes, and now a notepad. I can see how these items would be neat for some, but I’m not too thrilled. 

POPSUGAR notecard describes this item as a “trendy, rose-gold-embossed note block” and suggested retail is a whopping $52.00! I found Sloane Stationary Products Notebooks on Amazon for $24.95 plus free prime shipping. It looks like their Products are slightly cheaper on Sloane’s website.  That’s still steep to me but that’s just my personal opinion. SLOANE STATIONARY website sells these notepads for £39. Which equals $50.62 in USD. I’m impressed but this item will be gifted to someone who may use and appreciate it more than myself. My price verdict is definitely is ? Because I can’t value stationary like I guess I should so I guess I’ll go with the $50.62

  • #4. CAEDEN Linea N 1 Faceted Ceramic & Rose Gold Headphones

POPSUGAR describes these headphones as “eye catching and minimalist” and I just happen to agree. Love the white with the rose gold color and I know someone who will love these more than I will.  Suggested retail is $149.00. I found these Gorgeous Headphones on sale at Amazon for $86.00. That’s a value of $86.00 to me. 

  • #5. LANCER SKINCARE Dani Glowing Skin Perfector

POPSUGAR’s item card claims this product will “enhance your skins natural radiance, blur pore visibility, and boost your skin’s firmness in one smooth step.” I’m on the fence about this one. The cream is extremely smooth and silky and I do experience a radiant glow after applying, but from a person with very oily skin, that “glow” or shine in my words is not always welcome. And as for the claim of blurring pores, I just haven’t noticed. If you happen to know this product, and can give me suggestions for use, I would love to hear what you have to say because I haven’t given up on this product. 

While this won’t be a repurchase for me, I’d like to “play” with the bottle I have. Suggested retail is $95.00. My quick search did not find this product for cheaper than suggested retail but if you know where it can be found cheaper or you know a product equivalent please let me know.  Product value ? $95.00.

And last but not least, a cosmetic product I have been really enjoying.

  • #6. THRIVE CAUSEMETICS Triple Threat Color Stick in “Joy”

This item was pretty neat in my opinion. It’s a stick with a blending brush on one end and the product on the other end. POPSUGAR’s item card states this product “brings out intense color for cheeks and lips. It also has Vitamin C and “other natural ingredients” to brighten and hydrate. Personally this product serves more as a highlighter on my light skin, but that’s okay because it’s handy enough for on the go. 

Suggested retail is $36.00. THRIVE CAUSEMETICS also states that when you purchase a product, one is donated to a women in need. I couldn’t find this online outside of THRIVE’s website so I will stick with the suggested retail for this product. Product value $36.00. 

There you have it. POPSUGAR’s LIMITED EDITION Fall box for $100.00 has a total suggested retail totaling $443.00 and with my equivocal finds the total would come to $294.91. That’s still pretty good in my book plus some of my holiday shopping is now done.

Pura Vida Monthly Subscription

Today I received my second Pura Vida monthly shipment and I am just as pleased with this order as I was the first. The first order went to my 12 year old niece who was thrilled to receive these as a gift.

About the Service

Pura Vida is a monthly subscription service that sends three handmade bracelets by local artisans in Costa Rica. The value of the bracelets is about $50.00.  Purchases help provide full-time jobs to the said artisans. Here’s an excerpt from the PuraVida website.

While traveling through Costa Rica, Griffin and Paul crossed paths with two bracelet peddlers named Jorge and Joaquin. The colorful handmade bracelets seemed to capture the essence of their journey. At the time Jorge and Joaquin were living in poverty. They slept with their family in a single crammed room with three beds. After seeing this, Griffin and Paul asked Jorge and Joaquin to make 400 bracelets to take home with them. No one would have expected for this casual encounter to grow into the successful partnership that it is today.

The Cost

The cost is $14.95/month with option to cancel at anytime. Currently, I expect to receive a few more shipments as I am preparing for the upcoming holiday season.

The package is minimal with little waste which is a bonus in my book. Let’s look inside.
